NOTES:  Influenced by available diet, animals have developed a unique method of digesting plant nutrients. Since plants contain cellulose, a glucose polymer which makes up part of the plant fiber, it is interesting that animals do not have a digestive enzyme capable of breaking down cellulose. Instead, their digestive tracts contain vast numbers of symbiotic micro-organisms which digest the fiber and soluble plant constituents by fermentation.
